This tri-tip sandwich recipe is easy, flavorful, and perfect for family dinners or casual gatherings. The prep is simple, most of the time is hands-off while the meat slow cooks on the grill. For the best flavor, don’t skip the horseradish sauce!
1 (2–3 lb) tri-tip roast (from Don’s Meat Shop)
6 sandwich rolls
6 slices provolone cheese (or your favorite)
3–6 tablespoons horseradish sauce (see below)
2 tablespoons softened butter
Salt and pepper to taste
2 tablespoons horseradish
2 tablespoons mayonnaise
NOTE: Add more horseradish if you want it hotter (and to potentially clear any sinus issues you may be having!)
Step 1 – Prep the Grill:
Bring your grill to 250°F using indirect heat for slow cooking.
Step 2 – Season & Cook the Tri-Tip:
Generously season the tri-tip with salt and pepper.
Place it on the grill, close the lid, and cook for 45 minutes.
Flip, check internal temp, and continue cooking until desired doneness is reached (see chart below).
Remove from grill and let rest for 10–15 minutes.
Step 3 – Make the Horseradish Sauce
While the roast cooks, mix horseradish and mayonnaise in a small bowl.
Refrigerate until ready to use.
Step 4 – Toast the Rolls
Slice the rolls in half and butter the inside of each.
Toast until golden brown.
Step 5 – Assemble the Sandwiches
Thinly slice the tri-tip against the grain.
Spread horseradish sauce on the toasted rolls, top with sliced beef and cheese.
Step 6 – Serve & Enjoy
Serve warm with your favorite sides like steak fries, coleslaw, or roasted vegetables.
Rare = 130-135° F
Medium = 140° F
Well done = 145° F+
