This was a great meal and we’re happy to share the recipe. For a little different twist substitute parmasan cheese instead of using cheddar. We like that one too.
Ingredients
For the Shrimp:
- 1 lb large shrimp, peeled and deveined from Don’s Meat Shop
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp Cajun seasoning
- ½ tsp cayenne pepper (optional for extra heat)
- Juice of ½ lemon
- 1 tbsp fresh parsley, chopped
For the Grits:
- 1 cup stone-ground grits
- 4 cups water (or a mix of water and chicken broth for more flavor)
- 1 cup shredded sharp cheddar cheese
- ¼ cup heavy cream or whole milk
- 2 tbsp butter
- Salt and pepper to taste

Method

Cook the Grits:
- In a saucepan, bring water (or broth) to a boil.
- Slowly whisk in the grits and reduce heat to low.
- Simmer for 15-20 minutes, stirring occasionally, until the grits are thick and creamy.
- Stir in butter, heavy cream, cheddar cheese, salt, and pepper. Keep warm.

Cook the Shrimp:
- Heat butter and olive oil in a large skillet over medium-high heat.
- Add garlic and sauté for about 30 seconds until fragrant.
- Toss in the shrimp, smoked paprika, Cajun seasoning, and cayenne pepper (if using).
- Sauté the shrimp for 2-3 minutes per side until opaque and slightly charred.
- Squeeze in lemon juice and sprinkle with chopped parsley.
