Juicy shrimp are seasoned with smoky paprika, Cajun spices, and a touch of cayenne before being sautéed to perfection. They're served over rich, creamy cheddar grits for a satisfying meal that’s perfect for both weeknights and special occasions.

Ingredients

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined (from Don’s Meat Shop)

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tsp Cajun seasoning

  • ½ tsp cayenne pepper (optional, for extra heat)

  • Juice of ½ lemon

  • 1 tbsp fresh parsley, chopped

For the Grits:

  • 1 cup stone-ground grits

  • 4 cups water (or a mix of water and chicken broth for more flavor)

  • 1 cup shredded sharp cheddar cheese

  • ¼ cup heavy cream or whole milk

  • 2 tbsp butter

  • Salt and pepper to taste

Instructions:

Cook the Grits:

  • Step 1: Bring water or broth to a boil in a saucepan.

  • Step 2: Slowly whisk in grits and reduce heat to low.

  • Step 3: Simmer for 15–20 minutes, stirring occasionally, until thick and creamy.

  • Step 4: Stir in butter, heavy cream, cheddar cheese, salt, and pepper. Keep warm.

Cook the Shrimp:

  • Step 1: In a skillet, heat butter and olive oil over medium-high.

  • Step 2: Add garlic and sauté for 30 seconds until fragrant.

  • Step 3: Add shrimp, paprika, Cajun seasoning, and cayenne. Cook 2–3 minutes per side until opaque and slightly charred.

  • Step 4: Squeeze in lemon juice and toss with chopped parsley.

Assemble the Dish:

  • Step 1: Spoon creamy grits onto each plate.

  • Step 2: Top with shrimp and pan juices.

  • Step 3: Garnish with extra parsley and a lemon wedge. Serve hot.
