This quick and flavorful low-country boil is cooked entirely in foil packets, making cleanup easy and weeknight meals even easier. Loaded with shrimp, sausage, potatoes, and corn.
All available at Don’s Meat Shop. This dish is satisfying, spicy, and fast.
1–2 lbs shrimp, cleaned and deveined
2 baking-sized potatoes, cut into ¾" pieces
3 andouille or kielbasa sausage links, cut into ½" pieces
2 ears of corn, each ear cut into 4 pieces
2 tablespoons melted butter
1 tablespoon canola oil
1 tablespoon Old Bay seasoning (add more if desired)
Kosher salt and pepper, to taste
½ tsp cayenne pepper (optional, for heat)
Lemon wedges (optional for serving)
Step 1: In a large bowl, add all ingredients and toss well to coat evenly.
Step 2: Lay out two 16-inch long pieces of foil. Divide the mixture evenly between them. Fold and seal each foil packet tightly, ensuring there are no gaps. Use double foil if needed.
Step 3: Place packets on a baking sheet and bake at 425°F for 15–20 minutes, until potatoes are tender and shrimp are cooked through.
Step 4: Carefully open packets and squeeze fresh lemon over the top if desired. (Steam will come out and is very hot. Be careful).
Step 5: Serve and enjoy!
