This taco soup is hearty, quick to make, and loaded with flavor. It’s the perfect solution for a fast and satisfying weekday dinner—especially when using Don’s Meat Shop’s mesquite chicken and fiesta mix.
Notes: This recipe makes a thick and hearty soup. For a thinner consistency, feel free to add more enchilada sauce, water, or tomato sauce.
2 lbs mesquite chicken (from Don’s Meat Shop), grilled and diced
½ bag corn and black bean fiesta mix (from Don’s Meat Shop)
1 packet taco seasoning mix
1 can green enchilada sauce
1 can tomato soup
1 can cream of onion soup
1 can chicken broth (use less for a thicker soup)
Step 1: Grill the chicken until fully cooked, then dice into bite-sized pieces.
Step 2: In a large pot, combine all ingredients. Bring to a boil over medium-high heat.
Step 3: Reduce heat and let simmer for 10 minutes, stirring occasionally.
Step 4: Allow to cool slightly, then serve with your favorite toppings like shredded cheese, cilantro, or tortilla strips.
