About this Recipe

This Taco soup is very hearty and quick to make and extremely tasty. It’s perfect for a fast, satisfying weekday dinner.

Ingredients

  • 2/lbs. mesquite Chicken (from Don’s Meat Shop) grilled and diced
  • 1/2 Bag of Corn and black bean fiesta mix (from Don’s Meat Shop)
  • 1 Packet Taco seasoning mix
  • 1 Can green enchilada sauce
  • 1 Can tomato soup
  • 1 Can cream of onion soup
  • 1 Can Chicken Broth (Less if a thicker soup is desired).

**Notes**

This recipe makes a pretty thick soup. If you want a more thin consistency, add more enchilada sauce, water or tomato sauce.

Step by Step Instructions

Step 1

Grill chicken until cooked through and dice.

Step 2

Put all ingredients in a large pot and heat to boiling.

Step 3

Turn down and simmer for 10 minutes.

Step 4

Cool to the desired temperature and serve.
