About this Recipe

This version of low-country boil is extremely tasty and extremely fast and easy to prepare. It’s perfect for a fast, satisfying weekday dinner.

Ingredients

  • 1-2/lbs. shrimp, cleaned and deveined
  • 2 baking sized potatoes, cut into 3/4 inch pieces
  • 3 andouille or kielbasa sausage links,cut in 1/2″ pieces
  • 2 ears of corn, each ear cut into 4 pieces
  • 2 tablespoons melted butter
  • 1 tablespoon canola oil
  • 1 tablespoon Old Bay seasoning (more if desired)
  • Kosher salt and pepper, to taste
  • Lemon wedges (optional)
  • ½ tsp cayenne pepper (optional) If you want it hotter.

Step by Step Instructions

Step 1

In a large bowl add all ingredients and toss to combine.

Step 2

Lay out two 16-inch long pieces of foil and divide the mixture equally and put into the middle of each piece of foil. Fold the edges of the foil so that there are no holes. If you have thin foil or there is too much to adequately close the pouch, double wrap your packet.

Step 3

Place on a large baking sheet and cook for 15-20 minutes at 425 degrees or until everything is fully cooked in the packet.

Step 4

Once cooked squeeze with fresh lemon if desired.

Step 5

Serve immediately. Enjoy!
